[Study of the tryptophan-hydroxyproline coefficient of the meat of animals of different species]

Abstract

The ratio of triptophan/oxyproline in the longest spinal muscle of different animal species was studied. The examined characteristic feature of meat of different animal species and sex is not identical. A substantial influence on the variation of this feature exercises the content in the meat of the connective tissue proteins.
